Creamy Keto Mocha Chip Ice Cream

Of all the sweet treats Laith and I love most, ice cream ranks at the top. Having eliminated sugar from our lifestyle doesn't mean we can't have our beloved treat, we just needed to swap out sugar with an alternative sweetener.


I have a base recipe that can be adapted to any flavor: vanilla, chocolate, mocha, cherry garcia, strawberry etc.


Keto Ice Cream Base


Ingredients

  • 1 cup half and half

  • 2 cups heavy whipping cream

  • 1/2 cup sugar substitute (Allulose is best for ice cream, but Erythritol or Xylitol also works)

  • 1/4 teaspoon salt

  • 2 tbs vodka (optional but helps with texture)

Vanilla

  • 1 teaspoon pure vanilla extract or more to suit taste

Chocolate/Mocha/Coffee

  • 1/4 cup Raw Cacao powder

  • 1 tbs Espresso powder

  • 1/2 cup sugar free dark chocolate chips or any other flavored chips

Cherry Garcia

  • 1/4 cup Raw Cacao powder

  • 1 cup frozen cherries

Strawberry

  • 1 cup frozen strawberries

  • 4 oz or 1/2 brick cream cheese

  • 1 teaspoon pure vanilla extract


Directions:


If you are using the KitchenAid ice cream attachment, ensure it has been in the freezer for at least 24 hours per product instructions:

  1. Mix all ingredients together in a bowl.

  2. Pour mixed ingredients into the ice cream attachment using slow speed.

  3. Mixture will churn for anywhere between 20 - 30 minutes, check it at 20 minutes, if ready, pour soft ice cream into freezer ready ice cream containers.

  4. Ice cream will be texture of soft serve when ready, freeze for at least 4 hours or longer to scoop-able texture.

  5. Enjoy!
