These baked chocolate donuts deliver that soft, cakey texture you expect from a classic donut—without the need for frying and with a more balanced approach to ingredients. By combining a small amount of real flour with almond flour, you get structure and tenderness while keeping the overall sugar load lower.

  • 1/3 cup sour cream

  • 1/4 cup melted butter (or avocado oil)

  • 1 tsp vanilla extract

  • 1/3 cup + 1–2 Tbsp half & half

  • 1/2 tsp apple cider vinegar

Instructions


1. Preheat and Prepare

Preheat oven to 350°F (175°C). Lightly grease a donut pan if not using a silicone pan.

2. Mix Dry Ingredients

In a large bowl, whisk together the flour, almond flour, cocoa powder, sweetener, baking powder, and salt until fully combined and lump-free.

3. Mix Wet Ingredients

In a separate bowl, whisk together the eggs, sour cream, melted butter, vanilla, half & half, and apple cider vinegar.

4. Combine

Add the dry ingredients into the wet mixture and stir until smooth. The batter should be thick but pipeable, similar to a thick pancake batter. If needed, add 1–2 tablespoons of half & half to loosen slightly.

5. Fill the Pan

Transfer the batter to a piping bag (or zip-top bag with the corner cut) and fill each donut cavity about ¾ full.

6. Bake

Bake for 13–16 minutes, or until the donuts spring back lightly and a toothpick comes out clean.

Avoid overbaking to keep the texture soft.

7. Cool

Allow donuts to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before frosting.

8. Make the Ganache

Gently melt the chocolate, cream, and butter using a double boiler or microwave in short intervals. Stir until smooth, then mix in the sweetener and a pinch of salt. Let cool slightly until thickened but still pourable.

9. Frost

Dip each donut into the ganache and allow excess to drip off. Add sprinkles immediately before the chocolate sets.


Storage

  • Best enjoyed fresh (ours did not last more than 24 hours!!)

  • Store in the refrigerator for up to 2–3 days

  • Bring to room temperature before serving for best texture
