🥣 Ingredients

  • 1 cup cold water (divided)

  • 3 tablespoons grass-fed gelatin

  • 1 cup allulose (or your preferred 1:1 sugar-free sweetener)

  • 1 teaspoon vanilla extract

  • Optional: pinch of salt or a few drops of liquid stevia for extra sweetness


👩‍🍳 Instructions

  1. Bloom the Gelatin:

    In a stand mixer bowl, sprinkle the gelatin over ½ cup cold water. Let it sit for 5–10 minutes to bloom.

  2. Heat the Syrup:

    In a small saucepan, combine the remaining ½ cup of water with the allulose or sweetner of choice.

    Bring to a gentle boil, stirring until the sweetener dissolves completely. Heat to around 240°F (soft ball stage) if using a thermometer.

  3. Whip It Up:

    Start your mixer on low and slowly pour the hot syrup into the bloomed gelatin.

    Once combined, increase to high speed and whip for 10–12 minutes, until thick, glossy, and tripled in volume. Add vanilla and a pinch of salt in the last minute of mixing.

  4. Set the Marshmallows:

    Pour the fluffy mixture into a parchment-lined 8x8 pan. Smooth the top and let it set at room temperature (or in the fridge) for at least 6 hours or overnight.

  5. Cut & Enjoy:

    Dust with powdered sweetener before cutting into squares. Store in an airtight container.
